This soup is my new favorite food:

Vegan Red Lentil Soup

I haven't tried it yet with fenugreek and ginger. And I did sub olive oil for peanut oil. Oh, and left out the nutmeg. And used maybe 1 tsp. of chili powder in place of the cayenne. But, other than that, this is the recipe.
